Instructions
Step 1
In a medium bowl, whisk the tahini and fresh lemon juice until the mixture loosens slightly and becomes glossy.
Tip: If tahini is very thick, warm it briefly to loosen before measuring.
Step 2
Add the Manuka honey, grated garlic and apple cider vinegar to the tahini-lemon mix and whisk until combined.
Tip: Use Manuka honey with a UMF/MGO rating you prefer — it adds both flavour and natural sweetness.
Step 3
Slowly stream in the olive oil while whisking to emulsify the dressing. The mixture should thicken slightly.
Tip: For a creamier texture, use a small hand blender on low for 5–10 seconds.
Step 4
Thin the dressing with 2 to 4 tablespoons of warm water, whisking until you reach your desired consistency. Season with sea salt and a pinch of chilli flakes if using.
Tip: Warm water helps the honey and tahini integrate smoothly and prevents separation.
Step 5
Transfer the dressing to a jar, taste and adjust seasoning. Chill in the fridge for 5 minutes to let flavours marry before serving.
Tip: Dressing will thicken slightly when chilled — thin with a splash of water or lemon juice when ready to use.
