Instructions

Step 1
In a medium bowl, whisk together the white miso paste, Manuka honey, Dijon mustard, minced garlic, orange juice, lemon juice and rice vinegar until smooth.
Tip: Warm the honey slightly if it's very thick so it blends easily.

Step 2
Continue whisking and slowly drizzle in the extra virgin olive oil in a steady stream to create an emulsion. If using a jar, add oil and screw lid on, then shake vigorously until combined.
Tip: For a silkier texture use a small whisk or hand blender; add oil gradually to stabilise the emulsion.

Step 3
Stir in the toasted sesame oil (if using) and season with salt and freshly ground black pepper. Taste and adjust balance of sweet, salty and acidic — add more Manuka honey for sweetness or a splash more vinegar for brightness.
Tip: Adjust with 1 tsp increments so you don't overwhelm the flavours.

Step 4
Transfer the dressing to a jar, cover and refrigerate for 15 minutes to let flavours meld. Shake well before serving.
Tip: Dressing thickens when cold; whisk in a teaspoon of warm water or more orange juice to loosen if needed.

Serve over mixed greens, roasted vegetables or grain bowls. Store refrigerated for up to 7 days and re-shake before each use.
