Instructions
Step 1
In a medium bowl whisk together the white miso, tahini, Manuka honey, lemon juice, rice vinegar and soy sauce until smooth and glossy.
Tip: If the Manuka honey is thick, warm the jar briefly in a bowl of hot water to loosen it first.
Step 2
Add the grated ginger and minced garlic, then slowly stream in the olive oil while whisking to emulsify the dressing.
Tip: Whisking continuously while adding oil helps create a silky texture.
Step 3
Adjust texture by whisking in warm water, 1 tablespoon at a time, until you reach the desired pourable consistency (about 2–4 tbsp). Season with salt and pepper.
Tip: For a thinner dressing for drizzling, add more warm water; for a dip, keep it thicker.
Step 4
Cover and refrigerate for at least 15 minutes to let the flavours mellow and meld.
Tip: Resting enhances the miso and Manuka honey interplay — you can make this a day ahead.

Step 5
Give the dressing a good stir before serving. Use over roasted vegetable salads, grain bowls, steamed greens or as a glaze for grilled tofu or salmon.
Tip: Shake well if stored in a jar; separation is natural.
Step 6
Store leftover dressing in an airtight jar in the fridge for up to 7 days. Bring to room temperature and whisk if it thickens in the cold.
Tip: If chilled hard, place jar in warm water for a few minutes rather than microwaving honey directly.
