Ingredients

Instructions

Step 1
In a medium bowl combine the tahini, lemon juice and apple cider vinegar. Whisk until the mixture loosens and becomes creamy.
Tip: If tahini is very thick, stir it well first so it blends smoothly.
Step 2
Add the Manuka honey and olive oil, then whisk vigorously to emulsify. The honey adds shine and helps the dressing bind.
Tip: Use a small whisk or a fork; an immersion blender gives an extra-silky result.

Step 3
Slowly add warm water, a little at a time, until you reach your desired consistency (about 2–3 tbsp). Season with sea salt and taste, adding more honey or lemon if needed.
Tip: For a thinner dressing add up to 1–2 tbsp more warm water.
Step 4
Optional: heat a small dry frying pan over medium heat and toast the sesame seeds, shaking the pan, until golden and fragrant (about 2–3 minutes). Remove from heat to cool.
Tip: Watch closely — sesame seeds burn quickly.

Transfer dressing to a jar, sprinkle with toasted sesame seeds if using, and refrigerate. Shake well before using. Use as a dressing for leafy salads, drizzled over roasted veg, or as a sauce for grain bowls.
Tip: Dressing thickens in the fridge; let it sit at room temperature or whisk in a tablespoon of warm water before serving.
