Instructions
Step 1
In a medium bowl combine the Manuka honey, Dijon mustard, apple cider vinegar, lemon juice, minced garlic, salt and pepper. Whisk until the honey and mustard are fully integrated.
Tip: Warm the honey slightly (10–15s in the microwave) if very thick — it helps it combine smoothly.
Step 2
Slowly drizzle in the extra virgin olive oil while whisking vigorously to create a glossy emulsion. Continue until the dressing is thickened and cohesive.
Tip: Pour oil in a thin steady stream and keep whisking for a stable emulsion; a small jar and vigorous shaking works well too.
Step 3
Taste and adjust seasoning: add a little more salt, a squeeze of lemon or a splash of vinegar to balance the sweetness. Stir through the lemon zest and chopped herbs if using.
Tip: If the dressing is too thick, whisk in 1–2 teaspoons of warm water to loosen without diluting flavour.
Step 4
Leave the dressing to rest at room temperature for 15 minutes to allow flavours to meld.
Tip: Resting mellows the garlic and lets Manuka honey nuances shine through.
