Instructions

Step 1
In a medium bowl combine the white miso paste, Dijon mustard, minced garlic, lemon juice and Manuka honey. Whisk until smooth and the honey is fully incorporated into the miso.
Tip: If the miso is stiff, mix with a splash of warm water first so it blends more evenly.
Timing: PT1M
Step 2
Slowly drizzle in the extra virgin olive oil while whisking continuously to create a loose emulsion.
Tip: Whisking vigorously or using a small blender gives a creamier texture.

Step 3
Stir in the rice vinegar and sesame oil (if using). Add 2 tablespoons warm water and whisk; add the third tablespoon only if needed to reach a pourable consistency. Season with salt and pepper.
Tip: Warm water helps the Manuka honey loosen without heating the ingredients too much and preserves flavour.

Transfer the dressing to a jar, seal and refrigerate for at least 15 minutes to let the flavours marry.
Tip: Resting mellows the miso’s sharpness and allows the Manuka honey’s floral notes to come through.
