Manuka Honey Tahini & Miso Dressing

Instructions
Step 1
In a medium bowl combine the tahini and white miso. Whisk until they form a smooth paste with no lumps.
Tip: If tahini is very thick, add 1 teaspoon warm water to help loosen it before adding other ingredients.
Step 2
Add the Manuka honey and lemon juice to the tahini-miso paste. Whisk briskly until the honey is fully incorporated and the mixture begins to loosen.
Tip: Use room-temperature honey so it blends smoothly; cold honey can seize the tahini.
Step 3
Slowly drizzle in the olive oil while whisking to emulsify. Add the apple cider vinegar, warm water and season with sea salt and black pepper. Whisk until you reach a pourable consistency.
Tip: Adjust thickness with additional warm water a teaspoon at a time for a dressing, or less water for a dip.
Step 4
Taste and adjust: more lemon for brightness, more Manuka honey for sweetness, or a pinch more salt for balance.
Tip: Balance is key — the miso provides umami and salt, so add extra salt sparingly.
Step 5
Transfer the dressing to a jar, seal and refrigerate for at least 30 minutes to let flavours meld before serving.
Tip: Dressing thickens when chilled — whisk or shake before using. Keeps refrigerated up to 5 days.
