Instructions

Step 1
In a medium mixing bowl combine the tahini, Dijon mustard, Manuka honey, lemon juice, apple cider vinegar and minced garlic if using.
Tip: Use room-temperature tahini so it blends smoothly; whisk vigorously to combine.

Slowly stream in the olive oil while whisking continuously to create a creamy emulsion.
Tip: If the mixture is thick, add warm water a tablespoon at a time until you reach a pourable consistency.

Season with sea salt and a pinch of black pepper or cayenne, then taste and adjust acidity or sweetness — add a little more lemon juice for brightness or a touch more Manuka honey for sweetness.
Tip: Balance flavours in small increments; Manuka honey has a strong floral note so add gradually.

Transfer the dressing to a jar or covered container and let it rest in the fridge for 15 minutes to allow the flavours to meld and the tahini to mellow.
Tip: Resting helps the Manuka honey integrate and reduces bitterness from raw tahini.
