Instructions
Step 1
In a medium bowl whisk together the Dijon mustard, grated garlic, lemon juice and apple cider vinegar until smooth.
Tip: Warm the lemon for 10–15 seconds in the microwave to release more juice if needed.

Step 2
Add the Manuka honey and whisk until fully incorporated; the honey adds body and a caramel note.
Tip: Use a good-quality Manuka (see Manuka notes) — it won’t need much honey for sweetness.

Step 3
Slowly stream in the olive oil while whisking vigorously to emulsify the dressing into a smooth pourable sauce.
Tip: If you have a small jar, combine everything and shake vigorously — great for easy storage.

Step 4
Stir through the chopped thyme, season with sea salt and black pepper to taste, then cover and refrigerate for 30 minutes to allow flavours to meld.
Tip: Resting improves depth and softens the garlic bite; bring to room temperature before serving if chilled.

Give the dressing a final whisk or shake before serving. Adjust seasoning or acidity with extra lemon or salt if needed.
Tip: Uses: drizzle over leafy salads, roast pumpkin, grilled fish or as a glaze for chicken.
