Creamy Manuka Tahini & Mustard Dressing

Ingredients

(Notes: use UMF 10–15 for flavour; adjust to taste)

wholegrain mustard

(Notes: about 1 medium lemon)

(Notes: cold-pressed preferred)

(Notes: adds brightness)

(Notes: add 1 tbsp at a time to reach desired consistency (about 2–4 tbsp))

Instructions
Step 1
In a medium bowl, combine tahini, wholegrain mustard, crushed garlic and fresh lemon juice. Whisk until smooth and slightly thick.
Tip: If tahini is very stiff, warm the jar briefly in hot water and stir before measuring.
Step 2
Add the Manuka honey and apple cider vinegar. Whisk thoroughly to integrate the honey into the tahini mixture.
Tip: Use a good quality Manuka for floral complexity — the honey also softens the mustard’s bite.
Step 3
Slowly drizzle in the extra virgin olive oil while whisking to create an emulsion. Continue until the dressing is glossy.
Tip: If the dressing looks too thick, whisk in cold water 1 tbsp at a time until you reach your preferred pouring consistency.
Step 4
Season with sea salt and freshly ground black pepper, taste and adjust lemon, honey or mustard as needed. Cover and refrigerate to allow flavours to meld.
Tip: Making this at least 15 minutes ahead gives a smoother, more rounded flavour.

Serve drizzled over mixed greens, roasted vegetables, grain bowls or use as a dip. Store leftovers in an airtight container in the fridge for up to 5 days; whisk again before using.
Tip: Shake or whisk again before serving if separated; warm slightly at room temperature to loosen if very firm.
