Instructions
Step 1
In a medium bowl whisk together the tahini, Manuka honey, Dijon mustard, lemon juice and apple cider vinegar until smooth and slightly glossy.
Tip: If your tahini is very thick, warm it slightly by placing the jar in warm water before measuring — this makes it easier to whisk.

Slowly drizzle in the olive oil while whisking continuously to create an emulsion. Add the grated garlic and continue to whisk until fully incorporated.
Tip: Whisking while adding oil helps the dressing become silky rather than separating.

If the dressing is too thick, whisk in warm water one tablespoon at a time until you reach a pourable consistency suitable for salads or bowls.

Season with sea salt and freshly ground black pepper, then taste and adjust: add a squeeze more lemon for brightness or a little more Manuka honey to increase sweetness.
