Citrus Miso Manuka Dressing

Instructions

Step 1
In a medium bowl or jar, combine the white miso, Dijon mustard, tahini, freshly grated garlic, lemon juice and rice vinegar. Whisk until smooth and the miso fully dissolves.
Tip: If miso is lumpy, warm the lemon juice slightly to help it dissolve, then cool before continuing.

Step 2
Add the Manuka honey and light soy sauce/tamari. Whisk thoroughly until the honey is fully incorporated and the mixture is glossy.
Tip: Use a small whisk or an immersion blender for a silkier emulsion.

Step 3
Slowly drizzle in the extra virgin olive oil while whisking continuously to create a stable emulsion. Taste and adjust seasoning with salt (if needed) and freshly ground black pepper.
Tip: If you prefer a thinner dressing, whisk in 1–2 tbsp of warm water to reach desired consistency.

Transfer to a sealed jar and refrigerate for at least 30 minutes to let the flavours mellow and the honey infuse its floral notes throughout the dressing.
Tip: Resting enhances both the umami from the miso and the aromatic notes of the Manuka honey.

Shake or stir well before serving. Drizzle over mixed green salads, roasted kumara and broccolini, drizzle on grilled fish or use as a dressing for grain bowls.
